Preparation:
  1. Making Boondi: The batter is prepared by mixing gram flour with water to a smooth consistency. It is then poured through a ladle with holes into hot oil, frying until golden brown. The fried boondi is drained and set aside.
  2. Sugar Syrup: Sugar is dissolved in water and boiled to make a syrup. Cardamom powder is added for flavor.
  3. Combining: The fried boondi is mixed with the warm sugar syrup, nuts, and sometimes a little ghee, allowing it to soak up the syrup.
  4. Shaping: Once the mixture is cool enough to handle, it is shaped into round balls, or ladoos.

  • Kesar Boondi Ladoo: Made with saffron for a rich color and flavor.
  • Pista Boondi Ladoo: Incorporates pistachios for added crunch and a nutty taste.

  • 1/2 cup ghee (clarified butter)
  • 3/4 cup sugar (to taste)
  • 1/4 teaspoon ground cardamom
  • 2-3 tablespoons chopped nuts (almonds, pistachios, walnuts) (optional)
  • 2-3 tablespoons raisins (optional)
Instructions:
  1. Prepare Ingredients: Gather all the ingredients and set up your workspace.
  2. Roasting Chickpea Flour: In a pan over medium heat, melt the ghee. Once hot, add the chickpea flour. Roast it for about 10-15 minutes, stirring continuously, until it turns golden brown and starts to emit a pleasant aroma.
  3. Adding Sugar and Spices: Once the flour is roasted, remove the pan from the heat. Add sugar and ground cardamom, mixing well until the sugar dissolves.
  4. Adding Nuts and Raisins: If desired, add chopped nuts and raisins, and mix them well into the mixture.
  5. Forming Ladoo: Once the mixture cools slightly but is still warm, use wet hands to shape it into small balls (ladoos) about the size of a walnut.
  6. Cooling: Allow the ladoo to cool to room temperature. Once cooled, you can store them in an airtight container.
  • You can also add grated coconut for additional texture and flavor.
